Last week I shared a chili recipe that I like to make. While chili is a fan favorite in the winter a lot of people also like to warm up with soup. Today I have a soup recipe that I enjoy making.
Turkey-Wild Rice Soup
3 tbs butter or margarine
½ c all-purpose flour
2 cans (14 oz each) low sodium chicken broth
2 c cubed chicken or turkey breast
2 c water
2 tbs chopped onion
1 package (6oz) long grain wild rice mix
2 c milk
Melt butter over medium heat. Stir in flour with wire whisk until well blended. Slowly stir in broth with wire whisk. Stir in turkey, water, onion, rice and rice seasoning.
Heat to boil over high heat, stirring occasionally. Reduce heat to medium-low. Cover and simmer about 25 mins until rice is tender.
Stir in milk; heat just to boiling.
