Food For Thought: No-Bake Energy Bites
This week, instead of reviewing a local restaurant, Ashley has decided to share a recipe that she likes to make. She is starting us off with a great, healthy trail snack that you can make at home.
No-Bake Energy Bites
1 c (dry) old-fashioned oats
2/3 c toasted coconut flakes
½ c peanut butter
½ c ground flaxseed or wheat germ
½ c chocolate chips or caco nibs
1/3 c honey or maple syrup
1 tsp vanilla extract
1 tbs chia seeds (optional)
Stir all ingredients together in a medium bowl until thoroughly mixed. Cover and let chill in the refrigerator for half an hour.
Once chilled, roll into balls of whatever size you see fit. Store in an airtight container and keep refrigerated for up to 1 week. Makes about 20-25 balls.
